Garden chicken plate (prep time 15 minutes)
4 or 5 pieces of darkmeat chicken
2 cans whole peeled tomatos
2 cups fresh sliced mushrooms
1/2 cup diced onion
Fresh mint, oregano & garlic gloves to taste
Salt & pepper to taste
1/2 cup fresh parmesean cheese grated
Place chicken in 9x13 casarole dish season with spices then add vegtables.
Oven set to 380 cook for 1 hour uncovered baste every 15 minutes.
Add fresh parmesean cheese once out of oven. Let sit 10 minutes and serve.
Wonderful with garlic bread.
